New 'stak-able' eatery coming to downtown Gilbert; Grubstak to open in fall 2016

A new eatery is coming to downtown Gilbert.

GRUBSTAK is going to be a fast-casual restaurant focused on creating made-to-order "stak-able" meals.

What exactly does that mean?

Guests will choose a base for their meal: waffle or sweet potato fries if they're feeling indulgent, or roasted root vegetables or Romaine lettuce spears if they're looking for something healthier and lighter.

From there, guests will choose other items to stack on top of the base, like meats, cheeses, sauces and other toppings. All items will be prepared fresh in the kitchen.

"We've taken comfort food to an exciting new level by introducing healthy and indulgent Stak options," said owner Colton Grubb in a media release. "...guests will discover a unique eating experience that will make their mouths happy."

The meal is entirely customizable. However, there will also be signature Staks that have all the ingredients already picked out. Craft beer and wine will also be available.

The 2,968-square-foot restaurant, not including the patio, will have wood accents, open seating and floor-to-ceiling windows. It will be able to seat 120 people. LGE Design Build is handling the restaurant's construction.

It will be located within downtown Gilbert's Heritage Marketplace and is expected to open this fall.
