Scrapple
Ingredients include:
1 pack Pork butt
3Tbsp Fennel seed
2each Onions small dice
¼ cup Garlic minced
¼ cup Rosemary minced
3bunches Parsley minced
Grits see ratio
Directions:
Slice pork butt into ¾ in slices and season with salt and pepper and fennel seed
Sprinkle the onion and garlic over the pork and roast in the oven until lightly browned
Place in a 600 pan and add just enough water to cover the pork.
Place parchment and foil over it and a lid
Braise for approx. 3 hours or until very tender
Strain the meat from the liquid reserving all of it
Measure the liquid and using a 3-1 ratio 3 parts liquid and 1 part grits
Bring liquid to a boil in large stock pot slowly add the grits stirring constantly.
Cook for approx 20 min then add the shredded pork into the mix and mix
Cook for another 10 min then add herbs and season to taste
Once fully cooked ladle into ½ 3rd pans lined with parchment and cool over night
Slice 1 inch thick for service
Ingredients for the Lemon Dill Vin include:
2.5 ounces(weight) Dill
2each Garlic cloves
2cups Lemon Juice
5cups Oil blend
pinch Cayenee
1tbsp Honey
Ingredients for the chili lime aioli:
6 each Egg yolks
4 each Poblanos (roasted/cleaned)
½ cup Lime juice
4each Lime zest
4 each Green onions
2 qts Canola oil
1 each Clove of garlic
S+P To taste
Directions include:
Add egg yolks, poblano, and lime zest to vita prep and blend on medium hi until very smooth
Slowly drizzle in 1 qt of the canola oil until emulsion forms
Add lime juice and then slowly drizzle in the rest of the oil
Season with salt and pepper.
Fish Tacos
Ingredients for the taco marinade include:
2each Bunches of cilantro
½ cup Garlic cloves
1.5 cups Canola oil
3 each Scallions
Directions include:
Place all ingredients in blender and puree until very smooth
Pour over fish and allow to marinate
