FIRST LOOK: Aioli Gourmet Burgers to open brick-and-mortar restaurant in Phoenix

A Valley food truck is expanding its business and opening up its first brick-and-mortar location.

Three friends -- Kyle Hollenbeck, chef Tommy D'Ambrosio, and Michael Cartolano -- opened Aioli Gourmet Burgers 2 1/2 years ago in their hometown of Phoenix.

Since then, business has nothing but exploded. They have expanded to operating three Aioli Burger food trucks and launched a taco concept, Modern Tortilla.

If that wasn't enough to manage, on Oct. 18, the trio will open the doors to Aioli's first physical location at 32nd Street and Shea Blvd. 

"This was always the goal. We thought it'd be five years down the road, not 2 1/2, but it was always in the business plan," said Hollenbeck.

The concept will be fast-casual. Customers will walk in, place their orders and find a seat. When their order is up, a staff member will bring it to them.

Hollenbeck said the menu will feature the staple items that loyal fans have seen before (like burgers), but they will also notice new options, like Charcuterie boards, floats and shakes.

"We're looking for a family-friendly good place and that's why it made so much sense to do this in this neighborhood," said Hollenbeck.

Kyle, Tommy and Michael, all 28, grew up near 32nd Street and Shea, graduated from Shadow Mountain High School and attended Northern Arizona University's satellite campus.

So, bringing their latest project to their home-grown neighborhood, was a no-brainer.

"It's pretty awesome. I mean, it's a great experience and to do it with some of my best friends is really cool, too," said Hollenbeck.

The interior is white walls with a few photos, designer lights, a long couch and faux wood tables. They also have the opportunity to furnish a patio for outdoor seating.

The grand opening is planned for Oct. 18.
