LUNCH MEAT COOKIE! Cowboy Cookie Sandwich wins General Mills recipe prize

PHOENIX — Introducing the Cowboy Cookie Sandwich! This award-winning dessert includes lunch meat and won a General Mills recipe contest. The dish consists of PillsburyTM Place & BakeTM Cranberry-Orange Scones, capicola ham, sliced turkey, deli cheese, and honey with powdered sugar on top.

Todd Skinner is the Food Service Manager of the Chuckwagon at Happy Trails Resort in Surprise, Arizona. This beloved chef entered the 2019 Neighborhood to Nation™ Recipe Contest to exercise his creative muscles. Skinner concocted a flavor profile that would withstand a couple days on the trail in a saddlebag, since the resort he works at is cowboy themed.

Let's say his community was not "surprised" when his sandwich became a West Regional Winner. Western actors Dale Evans and Roy Rogers used to live at the Happy Trails Resort for a period of time and ate at the Chuckwagon themselves. The Cowboy Cookie Sandwich will become a staple on the menu at the Chuckwagon.

As a Regional winner, Skinner won $5,000 for himself and $1,000 for a local charity of his choice. Skinner recently adopted a furry family member from K-9 Konnection, an animal rescue and adoption agency, and gave them the prize.
